Chicken Caprese
10 oz. Boneless & Skinless Chicken Breasts
3/4 tsp. Salt
2 cups Cherry Tomatoes
1/2 cup, chopped Basil Leaves
3 oz., cut into 1/2 inch cubes Mozzarella Cheese
2 tbsp.
Balsamic Vinegar
1 tbsp.
Extra Virgin Olive Oil
4 cups Mixed Greens
5 oz.
Ditali
1/2 tsp Oregano
Cook pasta according to directions on package. Meanwhile, preheat the broiler. Rub the chicken with ¼ tsp of the salt and oregano. Broil 6 inches from the heat for 4 minutes per side, or until just cooked thru. Set the chicken aside and when cool enough to handle, cut it into 1 inch pieces. In a large bowl, combine the tomatoes, basil, mozzarella, vinegar, oil, and remaining salt. Place the greens on plates, top with the chicken mixture and serve at room temperature, or chilled. Serves 4
